Food safety. The West really takes for granted being able to trust food. I’ve lived in places you can’t, and it’s always discomfiting wondering if that chicken is really chicken, or if that is fried in vegetable oil or gutter oil. https://en.m.wikipedia.org/wiki/Gutter_oil
