What's a good hymn that most people would enjoy singing together at a wedding, and that would be reasonably familiar? (Guests are a mix of Lutheran, Catholic, Evangelical, and agnostic).

Come Thou Fount of Every Blessing is my personal favorite. Of course, you could always go the Little Women route by choosing For the Beauty of the Earth

Joyful Joyful We Adore Thee... not sure about the lyrics being appropriate for a wedding, but the melody is immediately familiar: it's Beethoven's "Ode to Joy".

So how about just the Ode to Joy? When I was being dragged to Catholic mass before I had a say in it, they used an arrangement of Ode to Joy in the hymnal, that was in English, as a recessional. I'm sure one like that'd be easy to find.
