Should admission to academic institutions be based purely on academic merit (ability & achievement)?

I have nothing wrong with some admissions taking into account athletics and community outreach… So the answer is no.
Why are those relevant to learning things in college? Should corporate job hiring take into account athletics and community outreach?

Success in a corporate job (or any job, for that matter) is not determined solely by academics. In fact, depending on the career path, a student that's well-rounded will most likely do much better in their career than those with solely a higher academic performance.
