Why is it that central and northern Europe have no spicy food, despite an apparent willingness to eat any part of any animal cooked in any way?

See research by Harvard guy Paul Sherman: the lower the latitude the more spices, to protect against spoilage. (Spices are antimicrobial; Northern Europe didn't need them as much bc it's colder)
