The binary idea of sex is not flawed. The overwhelming majority of people are either XX or XY. Even when intersex and sex chromosome aneuploidies are taken into account, M-F still applies to 99.9% of the population. More than 2, though if you care to count you'll need an explicit definition. Among mammals there are entire species w XX or XO males, & many others with "alternative reproductive tactics." Go outside of mammals & all hell breaks loose.

Biologists who study sexual differentiation make distinctions among levels of sex - genetic, gonadal, hormonal, behavioral. We can give the same courtesy to people, surely.

I’m sure most biologists would admit to the existence of mutations, aberrations, and outliers in pretty much any species on the planet.
