Is there any political psychology tweep who can point me to useful literature about how/when/why voters might be willing to vote against their own interests?
Do you mean idividual interests, family interests, ethnic interests, religious interests, or national interests?

All of these, although they can all be reduced to individual interests. I vaguely remember an article about the motivations of people on medicare knowingly voting against medicare, but I can't remember where or who wrote it.
