How do you respond to people that say “atheism is just another religion”?
Saying 'atheism is just another religion' is like saying 'hard vacuum is just another kind of weather'.

Both are centred on faith that they’re right. Agnosticism is the only rational position.

I would say it's a simply a choice based on quality of evidence. Religion follows lower-quality evidence, Atheism simply follows higher quality evidence based on the scientific method. So i'd say Atheism is "higher quality of evidenceism". But both rely on evidence.

Actually, religious beliefs don't rely on any evidence at all. That's why it's called faith.
