There’s something I always ask myself when I hear these kind o news. What about people’s freedom to express their own faith? Shouldn’t that be protect more than the risk of offending a religion that is not even the majority in the country (luckily I may add)?

Crikey. I hate to quote Snopes https://www.snopes.com/fact-check/raising-cane/ … but this principal's ban was based on myth & folklore. There is no historical evidence to the supposed symbolic meaning of the candy cane. On this technical basis he should have banned yeti images too. Stop ruining kids' fun
