It’s a basic ML fact that there’s an infinity of laws compatible with the same observations. Which ones we believe is more a function of psychology than physics.

No, I would say the most probable laws are determinable by Bayesian inference. Many suppositions may coexist of what the data generating function is, but the determination of the most likely is a mathematical and not psychological outcome.
Bayesian inference cannot distinguish between likelihood-equivalent laws. It’s a vast plateau, not a peak.
