Entropy is a redundant concept. Saying that a process increases entropy is just saying that the end state is more probable than the start one.

Except the most probable state might not have the highest entropy. This isn't correct.
It does, because reversibility implies that the most probable state is the uniform distribution.

Entropy is maximized in a uniform state, but under a given condition it's not guaranteed to be maximized and can increase or decrease reversibly. You also have to define with respect to what. System entropy very much can decrease and end up in a more probable state.
