If people learned by gradient descent, they'd need to burn themselves on the stove over and over again before learning not to touch it.

Hasn't evolution hardcoded learnings from "gradient descent" done by our ancestral genes (hot = danger) to give us that jump-start?

Agreed. But, I presume Evolution has endowed us the ability to make the "stove = hot" connection in one-shot learning and hardcoded "hot = danger" over generations.
