Question for physicists: Isn't there an equivalence between curved space and Euclidean space with a field, from the point of view of objects moving in it? In which case Einstein's choice is really a matter of taste?

If I have understood your question, the answer is no. There is no such field. Curved space is non-renormalizable, in this sense we can not create a CS field equivalent to a flat space. This is why it is not trivial to have a quantum theory of gravity (General Relativity).
Why is renormalizability a requirement? (And what do you mean by renormalizing a space rather than a field?)
