I don't see any way you could defend this statement. Unless you ascribe the metric to this "field" you mentioned, in which case, what role does the Euclidean spacetime have? You're just moving the important parts of the curvature to a field, which would make the eqs harder

No, acceleration is caused by the field, not by curvature, and the field is defined on Euclidean space, as usual.
