The above plot is in inertial coordinates, rather than it lat/lon of rotating Earth; in those coordinates each orbit of the ISS follows almost exactly the same track each time

These stations basically go in orbit around the earth the way you expect: in circles around the globe. But depicting a 3D sphere on a flat piece of paper (or like in the OP diagram) is impossible (look up the inaccurate world maps problem). So their trajectories look like this.
