Why do I not hear people talking about F#? Am I in a bubble? Do people think it's boring?

Most people I know who might be interested have no investment in the .NET ecosystem, so there'd be much more to take on than just F# per se.

FWIW, if I were to work on a .NET project, I'd be very interested using F#.

I assessed F# for a project recently, to use Freya, but it is in the midst of an overhaul/too new for our platform, so I vetoed it.

Nope. It occurred to me as I was wishing I could compose SQL, and thought of LINQ.
