You could make it so that people’s access to their data in a form that’s ergonomic and documented is built in to your product design from the start.

Yeah, that's been my line of thinking. This is (for now) just chat logs, for which there is no standard. But I can automatically store HTML files somewhere that look okay, make use of microformats where appropriate, and have really obvious class names.
