Sure, but if some respectable scientists disagreed w/Darwin, it'd still be misleading to present Darwin's thesis as "what scientists think"
It wouldn't be misleading to present it as what scientists have shown, which is why people talk about what scientists think.

One thing that's consistently underappreciated - or perhaps abused - are the different levels of certainty in different fields.

As a heuristic, "scientists know better than some hick" is straightforward enough. But people also lie, and can be corrupt. Balance of risk.
