You seem to be really fond of Airbnb. I worked there, I like the service. But Airbnb itself illustrates certain limits of startups.

Holding very large pools of assets is tough for startups. That could be real estate, cars, staff...

But these large asset pools enable consistency and QoS. Onsite staff is an advantage of hotels (as is laundry).

Two laundry machines for 300 rooms is efficient. One for every two rooms is a lot of wasted metal. Offsite laundry = stuff getting stolen.

A startup airline -- turning a blind eye to regulation, not owning planes, minimal investment in staff -- seems to be off limits.

(Various failed airlines of the past actually tried a lot of these shortcuts.)

Use of word "better" here is lazy and subjective. Hotels are clearly "better" ... but provide less value (benefit/cost)
