How do you feel about founders taking a (healthy) Salary from VC funding in the early days? Is it essential to be living on a knife edge?
They should take as much as they need to live, but it's not in their interest to take more, because any dollar they consume is one that doesn't go toward making the stock more valuable.

Sure, but most folks could probably live comfortably on ~80k when their experience and position might dictate a market value over $150k+ Most older professionals are contributing to investments etc, a founder could choose to forgo that. And drive a Toyota. And skip dessert.
