      You'll have to start with distillation first, which was not widely known until the 14th century.

      That's the problem with most answers to this question. To actually implement them in the 12th century (as opposed to just having a nice idea), you'd need a wide assortment of related technologies, engineering expertise, supply chains, etc.

      Distillation was possible with 12th century technology. It just wasn't widely practiced yet.

          And in winter you could even teach distilling via fractional freezing with almost zero tools or supplies. You just need the knowledge.

          That process concentrates everything else, not just alcohol, thus the result has a very (often undrinkably) strong taste.
