Did this make its way into your teachings about how to conduct YC interviews? Because it was a feature of mine and from my reckoning, most of my batchmates as well.

When you do that in interviews it's usually not so much to test the founders as to explore the potential of the idea.

How about when the startup idea you were trying to bootstrap is already existing out there but with such a poor execution that it is ridiculously low-profile

If you're confident that you can do a better job and have the resources to execute, then go for it.
