You might think that when you're cutting stuff from an essay, the more you cut, the harder it gets. This is true at the end. But in the early stages it's sometimes not. Sometimes after cutting one bit, you look at another and think "well, I don't need this either."

Interesting question. Write about whatever you're most excited to write about. If an idea is really important, you'll probably write about it again without even intending to.
