Having to do everything remotely for a while will teach us exactly what we were getting from doing them in person. (The answer could in some cases be "nothing.")

So what have you learned now that you've spent the last few months working with them remotely?

I already knew it was inferior to meeting in person, because I'd have to do this with startups that left SV after the batch.

What makes a conversation a high-bandwidth conversation? Is there something that makes them unique? Either in the result or how they are started?

To start with, being able to see people's faces, super good audio, and zero latency. So you can e.g. notice that the person you're talking to seems confused, guess why, and switch in mid-sentence to talking about that.
