I've never baked, so humor me: why is everyone making sourdough? Is that the perfect starter bread or something? Does the dough sour automatically, so it takes extra work to create a non-sourdough? @mgrnbrg

So "look at mah sourdough" is basically showing off? Is it common to keep commercial yeast around the house (and if so why is it called commercial)? Does domestic yeast lead to not-sourdough? So many questions.
People who bake their own bread have always baked more sourdough than gets bought in supermarkets. I think the reason is that they find it more interesting, both to make and eat.
