Is there an adjective that means "giving the appearance of simplicity and clarity, at the expense of true and nuanced understanding"? (Specifically, I'm trying to describe writing that portrays an issue as a binary choice between two extremes.)

Not only is that pretty close, I also just learned that "specious" does *not* come from the same root as "speculate", as I had always assumed. ("specious", from "species"; "speculate", from latin "specere", "to look")
