The problem is that other advertisers would then get traffic that could’ve organically gone to us in the absence of ads - hence the “Google Tax”.

Right. Ford advertises on the "Ford" search term. Seems pointless/redundant until they stop and suddenly Chevy is the first brand users see on the page.

We stopped paying for google ads a few years ago and there was no noticeable effect upon our traffic.

That just means you never did figure out how to use them in any meaningful way.
