Now I'm wondering if handshakes are a net positive or net negative social practice. Training the immune system, creating personal bonds (oxytocin etc maybe?) sounds great. Spreading diseases sounds bad.

Spreading diseases is good, when it's not a disease that kills healthy, middle-aged people. It's how you build your immune system. Taleb, small trauma, robustness, etc etc.
