I've noticed a shift in my (relatively low crime) neighborhood in term of what people do with laptops when visiting coffee shop restrooms: 5 years ago, they'd take them along or ask strangers to watch them. Lately though, they'll just leave laptops at their table with abandon.

Yes, I'd guess it's (1) better backups (2) cheaper laptops (3) lower value of resale laptops (4) more refined game theory (i.e. most people in the shop won't know if you asked a nearby person to watch for your laptop)

Are they younger usually? In college I noticed many friends of mine would just leave their laptop out in the open and unlocked and not think twice about it. I never understood it but it seemed to be a growing trend.

I had my laptop stolen ~1yr ago. Since then I’ve been militant to keep all files and data in the cloud. I am pretty slack with coffee shop breaks now, because knowing my data (work in progress) is safe is worth way more than the cost of hardware.
