People hate things that contradict their deeply-held beliefs. But since ideas that contradict deeply-held beliefs are the most interesting (see the history of physics for example), anyone on the hunt for interesting ideas will tend to offend a lot of people.

Is this a suggestion that non-STEM fields are less "useful"? Philosophical thought is the foundation of law and critical thinking, which hold societies together.

Of course non-STEM fields are less useful. You can't do anything with them. Philosophy matters in personal pursuits and when setting up a society. But a business will die unless they produce value. Gender studies could disappear tomorrow and the world wouldn't be too different.

I would distinguish PC from what happens without a profit-motive. Without that signal much unfruitful work happens. Or there's over-investment that gold plates things. This leads to loss of capability to create real value. It's this within ideology that creates the outside one.

I think PC is something else. It's often a tool used to dodge the product of societal / justice realization. For example, objecting to homophobia might be seen as "PC."

Antifragility (one of few concepts I agree on w/ Taleb) states that an institution type that has been around since 859 is extremely unlikely to "possibly" collapse now. You're looking at short term trends and fail to notice that universities have survived all of this before.

The epicenter of PC at universities is the administration. Admin dominates over professorship, prefers adjuncts, increases tenure track competition, dismisses great teachers, and avoids controversy. The university is run by MBAs & sales people not by educators & developers.
