But clients don't usually need as much handholding as they think. (That's one reason it's so frustrating.) Which means startups can enter previously handholding-dominated industries with handholdingless options.

Definitely. But there you're using handholding to bridge initial gaps in your product. It can't be intrinsic to the business.
