One way to tell when something is done is when you start to back out a lot of changes.

What do you mean by that? Could you say more?
E.g. When I'm writing an essay I print out and mark up successive drafts. Sometimes after making an edit, I change my mind and decide the original wording was better. This hardly happens at all in the first draft, but by the last it happens most of the time.

I've noticed the same thing happen with code, though I suspect in practice it's less common for code to get so polished.
