I'll take sci-fi's understanding of psychology over tech entrepreneurs any day. For example in the book/tv series The Expanse, while many are vegans, real meat and cheese is downright fetishised, with people spending great amounts of delta-V to get real farm animals into orbit.https://twitter.com/paulg/status/1099648817601921024 …

People have little loyalty to meat per se. If you made something that was cheaper and tasted better, most carnivores would switch. Once that shift started, social pressure against eating meat would grow rapidly. It would seem, and in fact would be, perverse.

...and any time you hear someone making an argument that food A will replace food B because it "tastes better", ignore them. If people actually cared about how good their food tasted on an absolute scale the wine industry wouldn't exist. Taste is cultural and endless subjective.

If fake meat is cheaper than the real thing, that's basically guaranteed to lead to status eating of the real thing.

Maybe a bit, but if the fake meat also tastes better, as I postulate, it will be a pretty niche thing, like wearing mechanical watches.

Meat consumption has positive health consequences a fact which will slowly make it's way into the mainstream awareness. Any large scale switch away from meat presents a huge health risk. The best hope for a switch is for a lab-grown nutritionally identical meat https://twitter.com/paulg/status/1099648817601921024 …

I have an old HN post somewhere on how to subsist off sub $2 meals (this was during YC). The meat we had was either Tuesday dinners or so processed as to be indistinguishable from fake. Millions get by on dollar menu deals from fast food. Status isn’t a concern. Next paycheck is.

This is basically “Diamond Age” scenario where anything and everything is digital (ie infinitely reproducible) then Hand-made/singular/analog becomes art and is fetishized by the wealthy even if it’s an inferior good.

@paulg thinks that food would become more like tech (objective, scientific, repeatable, fast moving, disruption). But I think it's the other way. Tech would become more like food, (cultural, subjective, pseudo scientific). Early example: Bitcoin.

Why do you think you could make it taste better? Like, what specific biochemistry? Given how incredibly subjective taste is the only way I can see it tasting better is from people eating it for a) social reasons, b) from their youth.
