Per capita meat consumption is rising dramatically. I think academically we could characterize it as demand for protein, but empirically that feels like it would be missing something key.

It changes based on genetics and environmental pressures in each population, but as a whole, yes. There is a large global demand that emerges out of the extreme nutrient density that meat provides. Populations/environments will trend toward highest density per unit cost.

The exception is in populations that have been heavily propagandized. If you don't associate high nutrient density with meat, you may chase a local concept of 'nutrient dense'. Many westerners attribute density to veggies, but those diets are known to leave nutrient gaps.
