I would add that even if you are 22, physically fit, and unable to fit in in any other kind of job, ask yourself 'what is the endgame here' . Do you really want to manage restaurants? Because being a cook gets old in a few years, even if you're making union wages.

Bourdain's goal was to discourage, Paul G's was to encourage. Both make good models to write our own. Each should be vivid and grounded, to be useful, as Bourdain's is.
