Out of curiosity, where should a person be at in terms of skill/experience to start applying for jobs like these. I've made a handful of smaller (mobile) games and I'm working on a bigger project, but I'm not sure if I'm ready to apply to something like this.
That sounds like reasonable experience, personally I look for driven people and I find what they’ve achieved in their own time can be a huge plus point. Give it a shot.
