6. dried herbs and spices go stale and eventually stop tasting like much, or at least as good as they did when they were fresh. (i literally just finished writing a book about this.) buy the smallest quantity of herbs and spices you can so they don't go stale before you use them!

4. bay leaves don't have to be "fresh" ie straight from the tree to not be stale. they can be dried and still good and flavorful, or dried and stale
