Does any real-time document editor: - Require Google sign-in; - And then provide named/attributed contributions; - While being editable by anyone who has the link?

You add specific people. Easiest to manage when you've groups set up, so set up group for segments of your org and share with them. Hope that helps?

I know it’s not out-of-the-box, but could you wire up a google form so when people submit their email, they are automatically added to the list? Being an explicit list, they’d have to be signed in to contribute
