I'd be skeptical as well, but at least in theory, the nature of neuroplasticity suggests it's possible, no?

Neuroplasticity means your cortex is flexible. It can rewire. It can’t really *grow,* though. From fetushood, your wires gain order as you mature. After some point, finding a more orderly or better overall wiring pattern becomes very difficult. (Obvs I am not a neuroscientist)

Those folks are indeed impressive. I’m curious though what a training regimen should look like. I don’t need better memory as I mostly offload stuff I need to remember to digital files. What concretely should I do?

One thing to keep in mind is that there are generally no new neurons being born after birth. Fundamentally different from most other organs in the body.
