Noblesse oblige and social egalitarianism, which are sometimes at tension with each other. (My opinion on this is heavily influenced by being in a culturally which linguistically requires by-the-minute status judgments and expects me to perform high status fairly frequently.)

(Without getting too much into the Japanese language lesson: there's nothing in either Japanese or English preventing one from addressing any waitress as if she were a middle manager at a client's company, and then (in US) tipping generously, because she is not a middle manager.)
