Mechanically the way to transition from coffee dates to consulting gigs is straightforward: “This has been a great conversation. I think we could create a lot of value working together. Can I send you a proposal?”

The proposal will not explicitly bill for a coffee-level conversation because if your rate card includes a line for a coffee then it will be systemically and scandalously too low. Instead, your consultancy assumes you do 8~20 coffees per engagement which happens. Price them in.
