Omakase is a Japanese word which means that you delegate your purchasing authority to the chef, who has superior knowledge than you about what is good, because they've devoted their life to it. The consumer experience of it ranges between shops, chefs, and relationships.

I try not to be a sushi or food snob but it’s difficult for me to ever justify burning one of my sharply limited yearly supply of “meals served in the US” on sushi. Should I make an exception?

It's hard to recommend sushi to a guy who lives in Japan, but it's one of my favorite restaurants in SF - it's where I go on my birthday.
