Omakase is a Japanese word which means that you delegate your purchasing authority to the chef, who has superior knowledge than you about what is good, because they've devoted their life to it. The consumer experience of it ranges between shops, chefs, and relationships.

("Relationships?" Yes. I went to the same sushi shop every week for 10 years. The proprietor knew what I liked, would throw in new things occasionally to keep it fresh, and -- I'm fairly certain -- occasionally had a negative margin on individual meals (due to COGS).

St. Louis has a "test kitchen" downtown owned by the (well-liked) restauranteur that has 3-6 other successful restaurants. It offers one meal (surprise until you arrive, not before you buy) at a set price each day at lunch. Take-out only. Lots of people love it.

Actually, I just remembered you went to Wash U! Not sure if Bailey's was here when you were around, but it's run by them. (Bailey's Range, Rooster, Bridge Tap House, etc.)

Agree. My most memorable meals have been of the Tasting Menu variety. The key is having the chef choose and surprise you; adds a whole new dimension to the meal. The idea of having a more personal relationship with the people making your food feels like a large opportunity.

There is a great cocktail bar in Denver called Green Russel where you tell the bartender what you like and they make a delicious cocktail. Like omasake for cocktails. They have never failed me.
