One reason lawyers are sticklers for good documentation is, iff contract ever comes into question, it gets checked:https://www.documentcloud.org/documents/3762069-Decision-After-Trial-National-Colleiate-Trust.html …

This is, essentially, 1st year law student level "Alright alright, before we get to the controversy before you and my client, lets see docs"

"Oh you have NO docs? Ohh that must be unfortunate for you. Well, we think we owe you nothing." Judge: "Yep, looks that way."

This is sort of like the exclusionary rule in criminal law, in that it probably bounces out lots of perfectly good debts but still useful.

It's the expectation that you're going to get beaten like a drum if you've got no docs which incentivizes above-board players to have them.

Got a letter from them asserting that bank had copious records, yadda yadda yadda. Sent them back a letter saying, politely, that IDGAFig.

Where's that quote... ah, here: "I would relish the opportunity to discuss your client's records in any court of competent jurisdiction."

For $1M the lawyers will (eventually) track down the right person. For $1k, they'll make two phone calls and then ruin your credit rating.
