Personally I feel they're the best way to stay in Japan as a tourist. Higher variance than business hotels. Unlikely to have bad experience.

Kyoto should have the best ryokan. Some are more expensive, but even cheap ones should be good. Best experience IMO

if possible, try a ryokan that's far from the city. Maybe no English, but really fun IMO
