A think I don't see enough small SaaS companies doing is trying to bite into a juicy enough problem such that they're 30%+ of someone's job.

Examples would include, let's see, Sift Science for a fraud analyst. They've got a workflow; Sift is all-but-essential to it.

Is that company going to churn? Only if they fire their fraud team. (No company with a fraud team will ever do this short of bankruptcy.)
