The news in Japan is not good. I refer you to your media outlet of choice. For anecdotal reaction: My wife took these photos a few minutes ago in central Tokyo. There are a lot more on this theme, covering several grocery stores.pic.twitter.com/8paF2IDY7W

Logistics is functioning (for the most part). Most of this is people who have recently updated negatively on how bad the situation is going to get in Tokyo.

Can one assume Japan, like other countries, has separate logistics chains for hotels/restaurants/etc than for supermarkets? (don't want to assume anything about Japan, really)

You can broadly assume that Japan is a developed Western nation and generate conclusions based on that assumption. Those conclusions are overwhelmingly likely to be right. Many people, on both sides of Pacific, believe this to be unlikely, without good reasons for that belief.

If only somehow they could see this coming and had three months of advance warning…

There will probably be a pandemic of apologizing and bowing soon.

It's the mismatch between supply chains that causes shortages, retail needs small quantities, restaurants need bulk, transitioning due to families cooking instead of eating out is hard. We're still struggling here in the UK. Best of luck.

Happened here (Netherlands) too, waited 2 weeks for the hoarders to get it out of their systems, and there is pasta on the shelves again. More than you could possibly eat.

Two weeks ago my mental image of the pandemic was a relatively empty Club SEGA. This is like watching life in slow motion.
