My mental model is that some companies will muddy the waters to make more profit. Maybe thats keeping a cut through a service charge. Maybe it’s clever wording “Love the restraint? Leave a tip … Well, we never said who you left the tip too.” I just don’t trust them anymore.

That's generally how tips work in the restaurant industry. Many states have a minimum wage + tip amount. If tips not enough, then employer must make up the difference. So, first portion of tip is neutral to server. Higher amounts increase server pay.

It is not hard to find instances of delivery/cab companies that technically passed on the tip but simultaneously reduced the base pay by a similar amount, netting the worker ~0 extra dollars. There's little reason to expect Uber of all companies to be doing the right thing here.

Only reason why I don't believe it is, unless there is something special about Uber Japan I don't know, it is first a Japanese company and not a Silicon Valley VC company. 7-11s in Japan are pretty good. Apparently KFC there is even premium stuff.
