      I think we’re going to start seeing really interesting product innovations coming out of commiseries as the food delivery wars cause a surge of product people to get involved in dark kitchens.

      That use case is interesting, but what comes next is plausibly even more interesting, after folks innovate at the infrastructure layer and make e.g. a literal API for food.

      I did a quick talk that I felt vaguely embarrassed about at the time due to how relatively little I know about this subject, but: a lot of what people identify as loving about Japanese food culture is actually a reflected love for Japanese food infrastructure.

      “z’omg how is it even possible that you can buy delicious food in a convenience store for $3?” A supply chain is how it is possible. Plausibly the world’s best for food, although I think China has a differently constituted but pretty credible alternative in some places.

          I'm not saying it's anywhere in the same league, but something must be going on with British food stores. They have about as many sandwiches and baked goods as Japanese convenience stores. There are also only about three or four brands.
