I think we’re going to start seeing really interesting product innovations coming out of commiseries as the food delivery wars cause a surge of product people to get involved in dark kitchens.

I did a quick talk that I felt vaguely embarrassed about at the time due to how relatively little I know about this subject, but: a lot of what people identify as loving about Japanese food culture is actually a reflected love for Japanese food infrastructure.

This is happening today in NYC - it’s like a new foundation in which to build upon. Dark Kitchens are like the browser layer and I can’t wait to see what is build on top by folks like

What’s the incentive for an API for food work when incumbents are walled marketplaces and use data as a competitive advantage? Would love to know your ideas on how those “wars” will play out

I find the whole cloud kitchen idea strange. An API for food sounds almost dystopian. Though I’m a Bay Area foodie —- I’ve been getting a CSA box from the same farm since 1998 and track the harvest from my small Oakland backyard. Generally tastier than JSON! Maybe I’m just old!
