That use case is interesting, but what comes next is plausibly even more interesting, after folks innovate at the infrastructure layer and make e.g. a literal API for food.

I did a quick talk that I felt vaguely embarrassed about at the time due to how relatively little I know about this subject, but: a lot of what people identify as loving about Japanese food culture is actually a reflected love for Japanese food infrastructure.

“z’omg how is it even possible that you can buy delicious food in a convenience store for $3?” A supply chain is how it is possible. Plausibly the world’s best for food, although I think China has a differently constituted but pretty credible alternative in some places.

Not sure if it is related but online traffic to The Kitchen Door was up 41.6% from December. We sent 1950 leads from food businesses to commercial kitchen in Jan—up 76% from Dec!

Especially some of the European countries has so much to learn about food culture. I'm not a big fan of food delivery but there's a pretty big problem with the options of how you can pay for the food. So many restaurants still don't accept cards, such a hurdle.

Is ”dark kitchens” another way of saying commercial kitchen? Or is this a different business model?

It's a communal kitchen shared across 3-4 virtual storefronts, where they only make delivery food.
